Italian Cookery – £120
- During this comprehensive full day course, James Claydon will teach you many traditional Italian culinary skills. You will make some of Italy’s classic seasonal dishes.
Autumn
- Wild mushroom risotto
- Ragout of wild venison, potato gnocchi and roast butternut squash with sage and rosemary
- Spinach and ricotta ravioli
Winter
- ‘Ribollita’ Tuscan style winter vegetable and cannellini bean soup with bread and new season’s olive oil
- Fresh egg pasta
- Pappardelle of wild hare and porcini mushrooms
- Pear and almond tart with creme fraiche
Spring
- Linguini of Crab with chilli, parsley & lemon
- Fresh egg pasta
- Pork Ossobuco – Italian for ‘bone with A hole’
- Gremolatta
Your course will begin at 9.30am through to 3.30pm. All your ingredients, recipes and lunch are provided.
